Kids Cooking Series: Belgian Waffles

Sometimes the world goes crazy and you get trapped in house social isolating, no school, no hang outs, no schedule. We’ve been left with so many questions as parents related to a world pandemic, COVID-19. We’ve also been forced into a form of quarantine with our children. As a parent, my biggest concern is how my kids are going to feel about this turn of events, how I’m going to alleviate their worries and answer all of their questions, but also, what are we going to do all day long? The answer to that last question is actually easier than I anticipated, we’re going to cook, we’re going to dance, we’re going to exercise and we’re going to learn.

Monday morning, when my kids were behaving in what I like to refer to as a sloth-like manner, I gave them a task. We had no frozen waffles, and no waffle mix. Waffles are one of my kid’s favourite treats. I asked them to track down a recipe and make some waffles! They found a wonderful recipe, worked together in the kitchen and had an incredible result…then they cleaned the kitchen. That’s part of the learning! They found their “No-Fail Recipe,” on a blog entitled, Lauren’s Latest, “Easiest Belgian Waffle Recipe.” I’ll add a link to the bottom of this blog.

INGREDIENTS:

2 1/4 cups of all purpose flour

1/4 cup cane sugar

1 1/2 tsp of baking powder

1/2 tsp baking soda

1/2 tsp salt

1 1/2 cups of milk (my kids used Lactose Free Milk)

1/4 cup of melted butter

1 tsp vanilla

2 eggs; beaten

My kids used our mixer to combine the ingredients. They added the dry ingredients followed by wet…they’re kids…they didn’t listen to the online instructions. There was no mixing the dry and then slowly adding wet, checking the thickness of the batter…

They heated the waffle maker and sprayed it with avocado oil. My daughter used a ladle that holds about 1/2 cup of batter and poured onto to the waffle maker.

One of the coolest gifts under the tree this Christmas was an R2-D2 waffle maker. In minutes it makes some pretty sweet waffles that my Star Wars Fans absolutely love.

I’m thrilled they worked side by side to add something they were excited to consume to the deep freeze. Thank you Lauren’s Latest, your recipe was quite possibly perfect!

So funny, they split up a pair of AirPods and listened to tunes while they cooked.

Needless to say, the kids were up early the next morning to toast their frozen waffles and make up a batch of whipping cream. They served waffles with maple syrup, blueberries and kiwi. As I’m Gluten Free, I munched on a muffin while salivating and enjoying their excitement. This family is going to be just fine with some social isolation. We might even relish in it!
