So, this week has brought more than I bargained for, COVID-19. We’re all social isolating, a word I had never heard until a little over one week ago. A concept I would never sign up for, and now its all…

The next Meals with Mel Session is going to be a b The next Meals with Mel Session is going to be a blast from my childhood. Let me preface this, I grew up in the 80s. Times were different. Even though this tradition may be a bit sexist, I remember it fondly. When I was in elementary school we used to have a Valentine’s Day Lunchbox Social. The girls were asked to decorate shoe boxes and fill them with a beautiful lunch for two. The boys were asked to bring money to purchase the boxes to raise funds for the school. The auction was anonymous. Boys did not know whose lunch boxes they were bidding on. I know, I know, heterosexist (is that even a word?). Cringe. What I remember most about these lunches was the crafting of the box the night before and the intentional packing of a delicious lunch. My mother is so creative and so crafty. She picked up red twine, ribbons, heart shaped doilies and beautiful papers. The two of us would create a master piece and fill it with the yummiest goodies. My box was always picked first and went for a pretty penny. I enjoyed sharing many packed lunches with the boys from my class and this year I have decided to share some of that nostalgia with my Meals with Mel friends. Let’s pack a lunch for our loved ones the night before Valentine’s Day. My plan is to pack it into a picnic basket and enjoy it on Valentine’s Day with my family in front of the fireplace. We’ll be making prosciutto wrapped chicken, a roasted vegetable salad with carrot shaped hearts and a mason jar cheesecake for dessert. Let me know if you’d like to join! $15 to drop in on February 13th at 7pm. This event should take about an hour and a half and as always, Meals with Mel 5 packs are available, 5 for $50! DM or comment below if you’re interested in joining me!

Anyone else need a list to accomplish anything? I always have a book on the go and I need it to complete goals, work projects and strategize for the future. Today I’m killing it on my list. I’m even planning my next Meals with Mel session. You can see my plan in the middle of the page. It’s going to be a Valentine’s Day Picnic Box. I’m thinking about prepping on the evening of the 13th, so I can enjoy a work free Valentine’s Day meal with my family.

Artichokes are loaded with tons of fibre and and a Artichokes are loaded with tons of fibre and and a good amount of protein; plus, they’re so easy to add to salads, or pastas. I love them so much I often grab them straight out of the fridge for a snack. Today I beefed up my Greek salad with two of them. Also, they’re just so pretty, I feel like I’m eating roses when I add them to my plate. Having artichokes around is a good way to increase your veggie intake! The canned version is always going to have added sodium, so practice moderation.

That all lead me to one of my favourite quotes! Thanks to my mom who has spouted this helpful tidbit my entire life. I wish I knew who said it originally:

That’s a wrap on a great few days away. Drew tur That’s a wrap on a great few days away. Drew turned 16 on the weekend and had the week off of school. I took he and two of his best buds to BC with me for some winter fun. They explored the lake, went to the hot springs, got tons of fresh air (so did Daisy) and they enjoyed each other’s company. I cooked, cleaned, worked on my business and started a 21 Day yoga challenge. I think everyone is feeling happy, you can see it in the smile on my boy’s face! Now to finish my morning cup, kick the boys out of bed so I can shut this place down and hit the road! I’m feeling happy and extremely relaxed; even though the boys were noisy all night, ate everything in sight and left tiny messes everywhere. I’m so grateful for the smiles and thank yous. ❤️
Oh my, when your son’s best buds ring your doorb Oh my, when your son’s best buds ring your doorbell and tell you that they brought lunch. I was thrilled that they stopped by unannounced; but artificial chicken flavour isn’t typically on the menu at my house. Here’s the thing guys: A gift is a gift; and this was a gift. They were so excited about the spiciness of the noodles. They couldn’t wait to eat them. So, me, as a Holistic Nutrition Consultant decided to hack this gift. I sautéed the noodles with rotisserie chicken, added an egg for some extra protein, chopped some green onions and served it up with fresh carrots. The boys were so pleased, and also very excited to learn some cool ways to improve the healthiness of a noodle lunch. See? A gift. A gift for me, a gift for them!

Ok, tonight I’m eating a starchy dinner. Butter Ok, tonight I’m eating a starchy dinner. Butter chicken with rice and a gluten free Naan bread. That’s a high carb meal that could create a blood sugar spike. Uncontrolled blood sugar can wreak havoc on your hormones, your skin and your emotions. Here comes the hack: When you consume your vegetables first, especially if they’re leafy greens, a protective matrix is created along the gut lining. This protects your intestinal barrier, but also helps to slow the digestion of your food. Need even more good news? Your blood sugar spikes are greatly reduced by consuming veggies first. This evening I did not prepare a starter salad, so I mowed down on some delicious greens straight out of my fridge while I was cooking. Nutrition doesn’t have to be hard.

Today, I am thinking about mental health. It’s B Today, I am thinking about mental health. It’s Blue Monday, and I feel like it’s important to talk openly about mental health. Not just on Blue Monday, every day. Today, I have been thinking about mental health from a nutrition standpoint. What can we do to support our mental wellness? Typically my first recommendation when it comes to depression, anxiety and even ADHD is this: ‘A diet sufficient in protein contributes to happiness’.

Here are some of the reasons I make this recommendation:
•
Protein contributes to satiety, a feeling of satisfaction and fullness. Not only will this lead to fewer food cravings, but it will also help to regulate blood sugar.
•
Protein is required for the production of every neurotransmitter in your body including serotonin, tryptophan and dopamine. Which means having enough protein in your diet contributes to happiness, but also to sleep.
•
Finally, protein is required to build all of your hormones. I believe when hormones are in balance, we feel better, our moods are steadier and our skin, our bones and our muscles are better able to repair themselves.
•
Today if you’re feeling sad, reach out to someone you trust, go for a walk outside or practice some self care. If you’re hungry, try adding a bit of extra protein to your snacks and meals. Give your body the raw ingredients it needs to make all the good stuff! We need 0.36 grams of protein per pound for our bodies to function; more than that if we lead active lifestyles. Take care of yourself and others.

I left for work in the dark and got home in the dark, but I felt filled with light this evening when I walked through my door. I’m so fortunate to be able to work in my passion.
