Sometimes you just need to improvise. I’m travel Sometimes you just need to improvise. I’m travelling this week. So…coffee out of a glass and granola and blueberries with macadamia milk out of a mug. No room for a yoga mat so stretches and core were completed on a bath mat. Hope everyone is feeling happy and sunshiny today!

I had a super fun evening with my Meals with Mel p I had a super fun evening with my Meals with Mel participants tonight. I’m so excited for tomorrow night’s picnic. We had lots of fun this evening turning our carrots into tiny hearts. They look so cute mixed in with these roasted vegetables. I’m already so excited to have a lovely indoor picnic with my family tomorrow night. I’m feeling so grateful this evening to be surrounded by wonderful friends, family, and to be able to do what I love for work. I hope you all find a moment to appreciate the truly wonderful that exists in your lives too.

My son’s parkour has been rescheduled, we’ll be lighting a fire and enjoying an indoor picnic. No stress on the prep, that’ll all happen tonight! I’m excited to see my Meals with Mel friends this evening!
Have we known each other long enough for you to kn Have we known each other long enough for you to know my picnic basket story? Well, keep reading if you don’t know about it!

My Dad has an established history of giving my mom weird gifts for holidays and birthdays. Gifts, that often, my mom does not like. One Christmas, my Dad got it right! A picnic basket! My mom loved it. The moment was instantly imprinted in his brain. So much so, that every time he spotted a picnic basket close to a holiday, he’d think! Oh! Perfect!! Sue would love a picnic basket! So he’d buy it for her; not remembering that he had already purchased one for her…or two. Lucky for me, my mom has a plethora of beautiful picnic baskets. When I moved to Calgary, she gave me one.

On Monday night, I’ll be teaching a virtual cooking session and packing this well used basket for a Valentine’s Day picnic with my family. On Valentine’s Day, we’ll enjoy a delicious meal, right here, inside my house, in front of the fire. A virtual prep on Monday at 7 means I’ll have a very easy Tuesday evening! I am absolutely giddy. Go see the Apple Lady. Lisa I am absolutely giddy. Go see the Apple Lady. Lisa, the actual Apple Lady is lovely and helpful and her prices are excellent. She has so many organic and local products in her little store. Go check her out if you’re in south Calgary. She’s located on Palliser Drive in the south west. You won’t be disappointed. The big white box of peppers, oranges, pears, and apples only cost me $35 to fill. I hand selected a variety of beautiful fruits that my family will enjoy this week. The value and service at the Apple Lady are top notch! Honestly, why are you still reading this post? Go there! You’ll love it!

Waffles for breakfast? I never love that choice, b Waffles for breakfast? I never love that choice, but it’s what Mark and the kids wanted. I have big goals for today and wanted a breakfast that would sustain energy. I toasted yo my gluten free waffles, added some banana, coconut whip cream, cacao nibs, hemp hearts, walnuts a little bit if maple syrup. By increasing the fibre and protein of this breakfast I felt more satiated and by immediately following up with a skate at Canyon Meadows Community Association’s outdoor rink, I asked my muscles to draw the excess glucose out of my blood and use it! Now I’m enjoying a hot cup of tea while my Daisy watches from the comfort of her slipper bed. I feel good, I released endorphins, enjoyed some fresh air and then I hydrated.  So far it’s a pretty good Sunday. I hope you’re having a happy Sunday too.

Working on my Next Meals with Mel recipe batch. I’ve honestly nailed it with the cheesecake jars. I’m playing with the stuffing in the chicken breasts; I make these a few different ways.  I’m trying to decide what will keep best for a picnic the following day. Please send me a note if you’re interested in this virtual cooking session. It’ll be Monday, February 13th at 7pm. We’re making a roasted veggie salad, prosciutto wrapped chicken and mason jar cheesecakes. I need a minimum of two participants to run!

The next Meals with Mel Session is going to be a b The next Meals with Mel Session is going to be a blast from my childhood. Let me preface this, I grew up in the 80s. Times were different. Even though this tradition may be a bit sexist, I remember it fondly. When I was in elementary school we used to have a Valentine’s Day Lunchbox Social. The girls were asked to decorate shoe boxes and fill them with a beautiful lunch for two. The boys were asked to bring money to purchase the boxes to raise funds for the school. The auction was anonymous. Boys did not know whose lunch boxes they were bidding on. I know, I know, heterosexist (is that even a word?). Cringe. What I remember most about these lunches was the crafting of the box the night before and the intentional packing of a delicious lunch. My mother is so creative and so crafty. She picked up red twine, ribbons, heart shaped doilies and beautiful papers. The two of us would create a master piece and fill it with the yummiest goodies. My box was always picked first and went for a pretty penny. I enjoyed sharing many packed lunches with the boys from my class and this year I have decided to share some of that nostalgia with my Meals with Mel friends. Let’s pack a lunch for our loved ones the night before Valentine’s Day. My plan is to pack it into a picnic basket and enjoy it on Valentine’s Day with my family in front of the fireplace. We’ll be making prosciutto wrapped chicken, a roasted vegetable salad with carrot shaped hearts and a mason jar cheesecake for dessert. Let me know if you’d like to join! $15 to drop in on February 13th at 7pm. This event should take about an hour and a half and as always, Meals with Mel 5 packs are available, 5 for $50!
